Recipe - Fluffy pancakes topped with Perfect Provender

Fluffy Pancakes

Nothing beats a slow Sunday morning, complete with fluffy pancakes, fresh coffee and table full of smiling faces! Here is our favourite recipe for easy, ‘fool proof’ pancakes… best enjoyed after a brisk Sunday stroll with rosy cheeks and windswept hair!

Ingredients (serves 2…generously!)

1 Banana

4 Eggs

6 Tbsp Gluten free oats

Coconut oil for cooking

Perfect Provender Granola

Your favourite fruit (Optional)


  1. Chop the banana and place in a jug with the eggs and oats.

  2. Blitz into a smooth batter

  3. Heat 1 tsp of coconut oil in a large frying pan

  4. Pour a little batter into the pan to form small pancakes, about 1 tbsp of batter per pancake.

  5. Once bubbles form or the pancake is easy to lift, flip it over and cook on the other side.

  6. Serve with your favourite fruit and top with Perfect Provender!
