Overnight oats with Rhubarb Compote

Grab and go or sit and savour…overnight oats are a great, summery breakfast choice!

Ingredients:

Overnight oats (serves 1)

40g Oats

1 tbsp Chia Seeds

150ml Coconut milk from a carton, almond milk or dairy milk (I like coconut as it makes it nice and creamy!)

1tsp Vanilla essence

Rhubarb Compote (makes a few servings!)

4 Sticks of rhubarb

2 tsp Coconut sugar / honey / maple syrup

Method:

  1. To make the overnight oats simply stir all of the ingredients together, cover and place in the fridge overnight.

  2. For the compote, slice the rhubarb and place in a large pan over a gentle heat.

  3. Keep stirring until the rhubarb starts to break down a little then add in the sugar / honey / maple.

  4. Once the rhubarb has become jam like, remove from the heat. Again, store in the fridge.

  5. In the morning, simply top the oats with compote and granola and serve!

    *You can use the leftover rhubarb compote for crumble or stir into yoghurt!
